Question GE fridge not to cold and making gurgling noises and shuts off when moved.

The model is LW18JYVRW-1. I got a good deal on this used fridge and brought it home yesterday. THe freezer temp was on the coldest temp (I think that is E) and so was the fridge I noticed (It was at 9) Though the freezer was fine, the fridge didnt feel very cold. I decided to stick a fridge thermometer magnet in the back. I then turned down the freezer a couple of letters as well as the temp, thinking it wouldnt need to be so high. Unforntuely when I did that it started defrosting itself. (Shut down and water was running down through this funnel in the inside of the fridge in the back ) After a bit it turned itself back on and I got the fridge to run at the normal operating temp (according to the thermometer) BUT its still on 9 to be able to do this and it STILL does not seem that cold.

PLUS I notice when the fridge is running and I open the door, I hear like a water running, gurgling in the back. This happens EVERYTIME I open the door. If its a quick open/close theres nothing. But if its a rummage around in the fridge for a few secs, then the noise. There is no water on the floor.
Its currently not running as I decided to move it so I could look at the back. And evertime I do that, its like it shuts itself off and I can leave the door open and there is no gurgling and its just basically not running and the temp on the thermometer shows its getting warmer.
I have not transferred all of my food yet to it as I would like to know what is going on first.
