Is there any reason I couldn't take an ice maker kit and mount it in an old deep freezer? It comes with wiring that needs 115 VAC but are there any controls that come from the electronics of the appliance itself or are they pretty much stand alone devices relying on control from the module and just need the 115 VAC?

It would be pretty difficult to do because you would need to drill a couple holes for the electrical and water line in your freezer cabinet. Not impossible to do, but not practical mainly.
An ice maker kit would come with just the ice maker and water valve, then you would need a wiring harness between the ice maker and water valve and 120 volts. Jake
