Cool Thermostat temp

Aloha everyone

I am a new kid on the block and first of all thank you for allowing me to be part of your forum.

I have a question for anyone? I make my own sausage and I need to maintain a temp of 55-60 deg F. I live in Hawaii and this is not the best area to maintain that temp. This temp is used to make dry sausage with a culture and must be maintained for 4-12 weeks at a time.

I understand that commercial fridges maintain a temp lower then the 55-60 deg. Is there a thermostat that can bypass this lower temp an raise it to the above temps.

1) can the thermostat be changed and still work as a fridge?
2) is there someway that it can be adjusted to a higher temp such as above?

Lastly..I have an old fridge sanyo and the highest temp is 50 and the lowest is 34 deg F ...as above I must have a constant 60. Its kinda hard when the average temp here in Hawaii is 72-76.

I appreciate any ideas even if its not with fridge.
