I am writing you from Europe and I have similar issues with my XRSR687BW-PXRSR687BW0 Amana of almost 20 years age.
The temperature in the freezer is inconsistent and fluctuates in between -5 and -18 degrees celcius when it is set to -19 actually (41,-0.4,-2.2 F respectively). If you do not use a thermometer, you would be sure that it is working OK.

This started almost 20 days ago with accumulation of ice in the fridge. The ice accumulated were like drops of water frozen anywhere. Starting from the ice bucket on top downwards, especially on the backpanel. By time a strange noise started to evolve, like the fan wings hitting something hard. Yes, it was, the ice was also accumulating behind the back panel and the drops of water freezing also on top of the fan propeller and causing the noise and even blocking it to operate. I cleaned twice the area, made it dry and wondered if the water was leaking from somewhere on the water line feeding the ice maker. Recently I cleaned the fridge to dry, cut the water supply, dried the ice maker cup even on top fully and started the fridge. I still have the same problem. Not as much but in 3 days the drops of water frozen on the backpanel started to accumulate. As the fridge is literally empty (no stuff inside) I suppose it can not find as much water vapor to accumulate enough ice to block the fan. I am sure, if I open the water supply, put the stuff in and start the ice maker the identical problem will reoccur.

Before seeing this thread, I thought the defrost thermostat should be the problem. Actually the fridge section temperature also fluctuates in our case but in parallel with the freezer section. So I suppose it is due to low cold air circulated by the freezer section as there is one cooling circuit/system to feed both the fridge and the freezer in our model. Correct? So, I do not suppose that our timer might have any issues. (On the old thread the timer was also proposed to be replaced!) Please comment...

On the other hand, I have seen threads talking about a defrost sensor issue. I kindly ask if there is one with our model and if its going faulty may lead this problem as well?

I suppose the bleow is the spare for the Defrost Thermostat of my fridge? Please confirm;

And if there is also a defrost sensor and you propose me to replace that as well, please refer to its ref. number so I would replace that one also.

I suppose the sensor is actually called Thermistor right? Do you propose me to replace that as well under my conditions?

23 degrees F and -0.4 degrees F.

Remove the back panel inside the freezer and take a photo of your evaporator coil, we need to see the frost pattern on it.

Normal would be a thin layer of frost on ALL the coils from TOP to BOTTOM.

Look at the very bottom photo below where it says NORMAL FROST PATTERN.

Hello Jake,

The freezer was used and I could not take a photo till today. But today, I took the attached two photos.
There seems to be an evenly distributed frost pattern. I have realized that the freezer gets into the defrost mode a bit too frequent; even when there is just s sligth layer of frost on the coils.
So, should I suspect from the defrost thermostat now? Or you think something else may be wrong?

If you suspect from the Defrost Thermostat would you please confirm if the below spare is correct for my fridge?

Yes, your evaporator coil frost pattern looks good.

Yes, the defrost thermostat is located on the top of your evaporator coil, like in this photo here:

You have a international model and I'm not familar with those.

Its controlled by the control board for the defrost cycle.

Here's the control board for your model, but its No Longer Available from the factory:

I have worked on these in the Netherlands.
We got these problems (as described) bad connection ad thermostats connections) and defect on motherboard. There is a grey capacitor (1microfahrad if i remember right) at the right side of the board (see picture)
Change it for a new one, and it probably will clear your problems.
There is also a testmodus on the board to test all functions and change some settings.
