I have the following Danby product:

It stopped cooling about a month ago, getting down only to about 55 degrees. It has been housed under the counter for many years, without any meaningful back ventilation, and the front panel is where the heat dissipated into my kitchen. When I pulled the unit out, the left evaporator (11) had a large icicle on it, which I defrosted. After restarting the unit, it cools to the lowest temperature possible, but then when I roll it back into the old slot, it gets back up to the 50s. What gives? Could it be the condenser (43) under the unit? It doesn't seem to have any temperature flux or be doing anything whatsoever. Any help is much appreciated, thanks in advance!!

There is a fan at the condenser. If it ceased to function the condenser wouldn't get enough air flow to cool properly.

Don't let it run when it's not cooling or damage to the compressor may eventually result.

and the one behind the condersors

The condenser is the hot part. The cold part is the evaporator(s).

If the condenser is clean and its fan is running, the problem may now be an inefficient (defective internally) compressor. There is nothing else I know of that would make a difference between being installed and running in the open.

It's so odd, I pushed the Danby into the housing this morning, heat shot up. Pulled it out and very quickly, we're back to 39 degrees. There's definitely one evaporator that keeps freezing over as it has started to show the large icicle building back up again since I shut the unit down last week and let it melt. Could that be the issue (I also jabbed it a few times when I first saw the icicle a few months back and likely punctured something)? That's a $50 dollar fix from what I am seeing online and everything is segmented so appears easy to DIY.

That could also be the result of an inefficient compressor.

Yes, but if you had it would be cooling (or not) uniformly, not works Ok when out but not work when in. No gas is no gas. That doesn't change by pushing it into an enclosure.

Thanks alot - appreciate the help! I called in a Dansby service person, it's $150 all in to diagnose and they'll deduct that from the cost of repair if I choose to fix the issue...I will let you know how it goes.
