GE 27 CF TXF27R thermostat

I have a 1989 model TFX27R 27 CU FT refrigerator. It's freezing veggies. I have an appliance thermometer in it and it reads 34 degrees (just to the left of dark range) and freezer is 0 degrees F. I have the temperature control (WR9X359 ==>WR9X442) set to 1. I'm going to put an hour meter on it to check run time which should be 40-50% or less at current amb temp.

I have tried to find a replacement thermostat but it no longer made. I have found a WR9X559 which has similar mounting but can't be sure or a WR9X499 which appears to have same mounting. My refrigerator is rated at 11.6 amps and these appear to be rated 12A at 120 VAC so I think the contacts will work.

Has anyone ran into this obsolescence problem and found a work around? If I got one of these and made my own mounting adaptor to mount do you see any issues as long as I make sure the contact rating is 12A? Does anyone know where I might find this old thermostat? Any help much appreciated.

That model number is incomplete. What's the rest of it? Different models use different thermostats.

I have found a WR9X559 which has similar mounting but can't be sure or a WR9X499 which appears to have same mounting.

Lots of thermostats look and mount the same. It's their temperature calibration that varies. (BTW. I don't know the temperature calibration of any of those thermostats.)

I keep a thermometer in each compartment at all times. These are the readings from each compartment now. The complaint is that veggies like lettuce are freezing in the refrigerator compartment with the dial set to warmest 1 position.

Also, wouldn't a refrigerator thermostat like these be calibrated to be adjustable to shut off somewhere between 40-34 degrees?

Yes, until their calibration fails with age and use, then the control needs to be replaced.

Ah. Yes, the lower part of the fridge is often slightly cooler than the top.

I have found a WR9X559 which has similar mounting but can't be sure or a WR9X499 which appears to have same mounting.

I still can't find the temperature specifications for any of the controls to judge their comparability but I looked up the controls you mentioned. The WR9X559 is used on a top freezer refrigerator model, the WR9X499 used on a SxS like yours. The latter might be a better choice if you wanted to try it.
