LSE4616ST LG Range - no explanation for needed reset every time temp is changed

We recently purchased 2 LG induction/convection ranges for our common house. model LE4616ST. The conventional oven works fine at 350-400. But if you want to get the convection oven setting above the preset fallback position of 350 you have to turn the oven to off, then press and hold the start switch until a little note sounds and the display flashes backward from 5-1. only then can you turn the oven to convection and set the desired temp. There's nothing in the manual about this, even in troubleshooting section. Help?

I've not worked or had any training on these LG ranges, so its best to contact LG at (800) 243-0000 to come out to see what's going on under warranty.
