ZDP36l6D2SS Replacing Thermostat on GE Monogram Oven/Range

Hi,
I have a GE Monogram range (Model #: ZDP36l6D2SS). The oven thermostat is having trouble and the part isn't being manufactured any longer. So, I picked up this universal oven thermostat: 6700S0011

However, I'm stumped trying to match terminals. I'm not great at reading wiring schematics and I'm not quite sure what does what on the new thermostat.

I know that the "Clean" function won't work with the new thermostat. Any help figuring out which wires go to which terminals on the new thermostat, would be much appreciated.

I included the wiring diagram for the universal thermostat and the technical PDF including diagram of my GE range.

I should also say that I'm competent with a multi-meter and tools. This repair is just throwing me for a loop because the wiring for the extra "features" on this range are confusing me when I read the schematic.
